*But... they were vegan?

I used to hate the idea of vegans. Why would someone give up the opportunity to taste delicacies like cake, bulgogi, chicken adobo, scrambled eggs, and more? Not eating cheese? Or dairy products? Not enjoying butter? Willingly limiting both my stomach and my tastebuds from infinite flavor and satiation? I could never.

My initial hatred of vegans stemmed from the few interactions that I had with stereotypical and annoying people who thought their vegan diet was their sole personality trait and looked down on people who "didn't have self-control" or who "didn't care about the environment." While this type of person still irritates me to my core, I have met many people who happen to be wonderful, multi-faceted individuals. They also happen to be vegan.


Though I am someone who has always had a mental block surrounding veganism and all that it may entail, I do see the environmental benefits that can come from cleaner eating.

*picking up where I left off on this post from September 2020. It is now January 2023.

I remember these tacos being delicious. They were from Crushed, in Pacific Beach. And they were vegan!


That's all. I had to get this post out of my drafts for mental clarity. I don't remember why this one didn't get finished. The class my food blog was initially created for probably just ended.
